First look
Maybourne — the group behind Claridge’s and The Connaught in London — is finally planting a flag in Paris. The Maybourne Saint-Germain will be its first hotel in the city, set inside the Îlot Saint-Germain, a listed 17th-century landmark on the Left Bank between Boulevard Saint-Germain and Rue Saint-Dominique. The company calls it a “fourth era” for the building, and on paper it reads like a serious one.
The plan is a palace-style hotel of 101 keys — 50 suites and 51 rooms — wrapped around an inner courtyard, with six places to eat and drink and Surrenne, Maybourne’s wellness-and-longevity spa, billed as one of the largest in Paris. That’s a lot to deliver in a protected historic shell.
What we’ll be watching
Whether the Paris opening changes what Maybourne is. The group’s reputation was built on three London addresses — Claridge’s, The Connaught, The Berkeley — where decades of repetition sharpened every detail. Paris is a blank slate, in a building that has never been a hotel, and the Left Bank already has the Lutetia. We’ll be watching whether London’s discipline travels, or whether a new city means a softened version.
Whether six dining venues is ambition or overreach. Six places to eat and drink inside a 101-key hotel is a lot to staff and fill, and Paris has standards. The Japanese restaurant is the most interesting bet — either it anchors the food offer or it reads as a trend-chasing add-on. We’ll be watching whether the program earns its footprint or quietly shrinks after opening.
Whether the former Ministry of Defence shell becomes a hotel or just a historic shell with rooms in it. The building has been off-limits to the public for centuries and has never been a commercial address — the inner courtyard and the classified façades are the promise, but a listed building this size limits what you can actually do to it. We’ll be watching whether the conversion feels genuinely inhabitable or reverent to the point of stiffness.
Whether 2027 is realistic for a project this complex. Restoring a protected 17th-century monument in Paris, fitting a 30-metre rooftop pool, a Surrenne spa large enough to be one of the city’s biggest, and 23 branded residences alongside 101 hotel keys is not a straightforward build. The date is held for now but historic-building conversions in France have a way of moving.
