First look
Oetker Collection doesn’t open hotels often, so a new one is worth paying attention to. This will be the group’s 13th property and its first in Saint-Tropez, going up on the former site of Le Mas Bellevue, on the road between the town and Pampelonne beach in Ramatuelle. The idea on paper is a Provencal hamlet rather than a single block: fifty-three keys spread across eleven two-storey houses, every room with its own terrace or patio.
Interiors come from Gilles & Boissier, the Paris studio behind Le Bristol’s redesign and a long list of restaurants worth the trip. That pairing is the part we’re most curious about, alongside an infinity pool, a wellness floor, and the usual run of bars and restaurants.
What we’ll be watching
Whether the hamlet layout lands. Fifty-three keys across eleven separate two-storey houses is an interesting bet for a brand that usually trades on the warmth of a single building — the risk is that guests feel they’re in a holiday park rather than a hotel. Whether Gilles & Boissier’s interiors can stitch those eleven houses into something coherent is the central question.
Whether the dining is more than a backdrop. Oetker’s best properties take food seriously — Epicure at Le Bristol holds three Michelin stars, Brenners has its own culinary identity — but the Saint-Tropez announcement lists only ‘bar and restaurant offerings’ with no names or concepts attached. We’ll be watching whether the dining program turns out to be a reason to visit or just a convenience.
Whether it’s ready for the season that matters. The 2027 target is ‘the 2027 season,’ which in Saint-Tropez means May or June — and as of mid-2026 the hotel is still under construction and has no name. That’s a tight runway. An opening mid-July instead of opening day reads very differently for a property that lives and dies on the summer calendar.
Whether Oetker can actually hold the line in a market that just got busier. Cheval Blanc Saint-Tropez is the incumbent luxury address in the bay; COMO Le Beauvallon reopened on the same coast in April 2026; Byblos is mid-renovation. Arriving into that competitive set without an established name on this property puts pressure on the service to do the talking from day one, which is exactly where Oetker has historically been strong — but also where a new build can stumble.
